Established in 2002, Gazander Oysters is owned and operated by the dynamic duo of Steven and Carly Thomson. Steven and Carly are known to care for their oysters every single day and guarantee “Gazander Oysters found at any table in Australia to have their personal approval”.  

Growing oysters runs in the family, as Carly is a second-generation farmer whose now retired father is one of the first intensive oyster growers in Coffin Bay. Steven on the other hand comes from a family of grain producers with a wide range of professional experience in commercial banking, landscaping and Rock Lobster fishing. 

They are driven by the desire to “sustainably produce high-quality oysters while protecting the environment they grow in”. They nurture oysters like “their own babies” and are passionate about providing customers with a luxurious and enjoyable eating experience. 

For them, “Oyster farming is the perfect mix of harnessing technology, weather patterns and years of intuition” to produce a product that is respected and cherished by its consumers. They are extremely meticulous in their operations and have dedicated quality checks in place across the lifecycle from 4mm spat to becoming succulent and harvest ready almost two years later. Steven and Carly are also committed to continuously improving their farming practices, using renewable energy sources, recycling water and waste materials as a part of their production processes.
